Cooking Class Experience:  Pat LaFrieda Dry Aged Steak Night – Wednesday, 2/25 @ 6:30pm

This hands-on cooking class is designed for anyone who wants to cook steakhouse-quality meals with confidence and precision. Featuring premium beef from Pat LaFrieda Meat Purveyors, the experience focuses on practical techniques that deliver bold flavor and professional results at home.

Guests will learn how to properly handle and cook prime, dry-aged steaks—covering temperature control, searing techniques, and timing to achieve a perfectly cooked cut every time. The class also includes the preparation of classic steakhouse-inspired accompaniments that elevate the meal and complement the richness of the beef. The atmosphere is warm, interactive, and flavor-driven, making it equally enjoyable for passionate home cooks and dedicated food lovers. As part of this Chariteam experience, a portion of the proceeds will benefit the selected nonprofit, allowing guests to enjoy an incredible evening while supporting a meaningful cause.

Hosted at Heirloom Kitchen, this experience takes place in one of New Jersey’s most celebrated culinary destinations. Heirloom Kitchen is a restaurant, cooking school, and retail space known for its collaborative spirit, open kitchen, and commitment to culinary excellence. From its earliest days, it has attracted talented chefs from across the tri-state area and earned national recognition, including being named one of the “Best Cooking Classes Around the World” by Food & Wine Magazine.

Heirloom Kitchen is led by founder and managing director Neilly Robinson, who oversees all aspects of the business—from cooking classes to restaurant operations and retail. In 2024, she was named a James Beard Foundation Women’s Entrepreneurial Leadership Fellow. Under her leadership, Heirloom expanded its vision by partnering with acclaimed chef David Viana to introduce a weekend restaurant alongside the cooking school.

Chef Viana brings experience from some of the world’s most respected kitchens, including Eleven Madison Park and the two-Michelin-starred Villa Joya in Portugal, and has worked alongside chefs such as Bobby Flay and Michael White. His cooking has earned three stars from The New York Times, three-and-a-half stars from The Star-Ledger, and a James Beard Award nomination for Best Chef in the Mid-Atlantic. Together, the Heirloom team delivers refined, thoughtful cuisine in an approachable and inspiring setting.

This is a BYO experience. Heirloom Kitchen is also a showroom for Alba Estate Vineyard, a small, family-owned winery located in the rolling Warren Hills of Milford, New Jersey. Guests may purchase Alba’s premium wines by the bottle at retail pricing.

The winning bidder must contact Heirloom Kitchen as soon as possible after the auction concludes to notify the team of any food allergies or dietary restrictions. Advance notice is required to determine whether accommodations can be made prior to the class.

We believe in full transparency. Here’s how the proceeds from a typical winning bid are allocated:

40% – Supported Charity: This portion of your winning bid goes directly to the charity featured in the auction. This helps fund their mission, programs, and the real-world impact they create in their communities.

40% – Item or Experience Provider: This portion goes to the business or individual providing the item or experience. In most cases, they are offering it at a heavily discounted rate—often below their actual cost to deliver it—as a way to support the cause. This share helps offset their costs and creates an additional revenue stream so they can keep doing what they do best while continuing to participate in future charitable campaigns.

20% – Chariteam: This portion goes to Chariteam so we can continue to host auctions that support our charity partners’ missions and impact. It helps cover our staff, operations, and fixed costs involved in sourcing and curating these heavily discounted items and experiences, managing relationships with providers and charities, and running the technology and support needed to make each auction safe, seamless, and impactful.
